What you Need:
Cedar Planked Scallops
1 lb large scallop (about 16 large, thawed as per package directions)
1 cedar plank untreated, soaked as per directions with cedar plank
Contents of pouch of Maple Peppercorn Rub
3 Tbsp (45ml) olive oil
What to do:
Place thawed scallops in a bowl and toss with oil & seasoning. Let sit for 10 minutes.
In a well-ventilated area, preheat barbecue grill to medium or medium-high (350 to 425 degrees).
When grill is ready, place wood plank on grill.
After three minutes, flip plank.
Place scallops on plank, close grill and let cook for about 10 minutes (depending on size of scallops).
Food will continue to cook on plank after removed from grill, so adjust time according to your food.
Remove scallops from grill and serve.
Wrap scallops with bacon held on with a toothpick for an even yummier treat.
