Chicken, Cheddar & Broccoli Frittata

This is a delicious combination but, if you have no chicken, no Broccoli, no problem! Frittatas have endless possibilities, use whatever odds and ends you have on hand plus any of our dip mixes, like the Cheddar and bacon, and make it your own.

ALL YOU NEED
 1 pouch Cheddar & Bacon Dip Mix
 ½ cup (120 ml) broccoli florets
 2 tsp (10 ml) butter
 4 eggs
 4 tbsp (60 ml) sour cream, or yogurt, or milk
 Salt & pepper to taste
 Hot pepper sauce (such as Tabasco), to taste
 1/2 cup (120 ml) cooked chicken in chunks
 2/3 cup (160 ml) shredded sharp Cheddar

Preheat oven to 375 F (190 C).

Bring a small saucepan of water to the boil, add the broccoli and cook for 3 minutes. Drain and set aside.

In a small frying pan, melt the butter over medium-high heat, add the Cheddar Bacon Dip Mix, melt the butter, pour it into the baker and cook until golden, about 5 minutes. Remove with a slotted spoon, set aside.

Beat the eggs in a bowl with the sour cream; add a few drops of hot sauce and a sprinkle of salt and pepper. Add the already prepared Cheddar Bacon mix, broccoli, chicken and blend.

Pour the egg mixture into the baker, sprinkle the cheese over the top and bake for 20 minutes until golden and bubbling.
