What you Need:
For 2 servings, you will need:
15ml (1 Tbsp.) Fajita seasoning
200g/7 oz. boneless chicken breast cut into thin strips
200g fresh vegetables (red and green pepper, onion) seeded and cut in strips
¼ cup (50 ml) chicken broth
½ Tbsp. (7.5 ml) vegetable oil
2 flour tortillas
Sour cream, salsa, guacamole and shredded cheddar cheese as desired to dress the fajitas.
What to do:
Wrap your tortillas in aluminum foil and heat in the oven at 200F/95C
Meanwhile heat the oil in a large skillet; cook the chicken strips over medium-high heat, stirring constantly, for 5 minutes.
Add the onion, and peppers to the pan and cook at medium heat for another 5 minutes or until the vegetables have begun to soften around the edges.
Add the seasoning and the broth and stir, continue cooking for another 5 minutes stirring often.
Serve immediately, in the warm tortillas, and dress to your liking with sour cream, salsa, cheddar cheese and guacamole.
