250 g (8 oz) Penne Pasta
15 g (1 tbsp) butter
20 g (2 tbsp) all-purpose flour
125 ml (½ cup) white wine or chicken broth
250 ml (I cup) heavy cream
55 g (½ cup) Mozzarella cheese shredded
15 g (¼ cup) grated Parmesan cheese
55 g ½ cup cherry tomatoes, halved

In a large pot, cook the pasta according to package instructions, save 1 cup of pasta cooking liquid.

Meanwhile, melt the butter in a large skillet over medium heat, whisk in the flour till lightly browned, about 1 minute, gently whisk in the white wine or chicken broth, whisking constantly.

Stir in the pouch of Caprese Dip mix, add the cherry tomatoes and gently stir in the cream and cheeses until slightly thickened, about 1 minute.

Toss the drained pasta with the sauce, add cooking liquid as needed to thin out the sauce. Add salt and pepper to taste.
