 3 tbsp. (45ml) fresh lime juice
 2 tbsp. (30ml) olive oil
 450 g (1lb) boneless chicken breast, in 4 portions, pounded

Combine first 3 ingredients (add a little bit more oil if too pasty). In large freezer bag, add chicken and marinade.

Shake well, turning and coating all sides of chicken. Let marinate for at least 2-3 hours in refrigerator.

Heat skillet or grill. In the meantime, pat off excess marinade from chicken breast.

Cook chicken for 4-5 minutes, turn and cook 5 more minutes.

Chicken should be golden brown. Use a poultry thermometer to insure it is properly cooked.

Enjoy with a fresh lime wedge and pasta or rice.
