Sun Dried Tomato Creamy Pasta Sauce With Shrimp & Spinach

Our dip mixes are so versatile, just use your imagination. Our Sun Dried Tomato Dip makes a delicious creamy pasta.

ALL YOU NEED
 Contents of 1 packet Sundried Tomato Dip Mix
 30 ml (2 tbsp) extra virgin olive oil
 1 clove garlic, minced
 15 ml (1 tbsp) olive oil
 750 ml (3 cups) uncooked pasta
 300 g (10 oz) frozen spinach nuggets ((30 g/1 oz) pieces)) – about 10 pieces, thawed
 454 g (1 lb) large shrimp, peeled & deveined
 125 ml (1/2 cup) chicken broth
 125 g (1/2 cup/4 oz) fat reduced cream cheese
 60 ml (1/4 cup/4 oz) freshly grated Parmesan cheese

Empty contents of our Sundried Tomato Dip Mix into a small bowl & add extra virgin olive oil. Stir until well combined.

While Dip Mix & oil marinate, cook pasta according to package directions.

Heat a large non-stick frying pan over medium high heat. Coat pan with 15 ml (1 tbsp) olive oil & sauté garlic for 30 seconds. Add shrimp; cook 4 – 6 minutes. Add chicken broth & cream cheese. Stir constantly to combine.

Reduce heat and simmer for a few minutes (sauce may seem watery, but will reduce to a thicker consistency as it simmers).

Add Dip Mix & olive oil mixture; stirring until well combined. Add spinach; stir again until everything is well combined.

Continue to cook for about 2 minutes. Remove from heat and stir in drained pasta & Parmesan cheese.

Garnish plate with lemon wedges & a scattering of fresh basil leaves.
