Chicken Lemon Olive Tajine

Try our Tajine seasoning to spice up your chicken with this classic Moroccan inspired dish.

Yields6 Servings
ALL YOU NEED
 1 whole chicken cut into 8 pieces
 1 onion, sliced
 45ml (3 tbsp) olive oil
 16 pitted green and/or black olives (375ml)
 125ml (½ cup) chicken broth
 60ml (¼ cup) lemon juice

PREPARATION: Take ½ - 1 tbsp of seasoning (to taste) and 15ml (1 tbsp) olive oil. Rub on chicken and marinate overnight.

COOKING INSTRUCTIONS:
Preheat oven to 300°F.

In a skillet over medium-high heat, add 2 – 2 ½ tbsps olive oil and brown chicken on all sides. Transfer to tajine and set aside. In same skillet, cook onion until tender and starting to caramelize. Add onions, chicken broth, 1 ½ - 2 tbsps of tajine seasoning (to taste), lemon juice and olives to tajine. Cover and cook in pre-heated oven for 1-1 ½ hours (until chicken is falling off the bone). Makes 4-6 servings.

Cooking Suggestions: Heat base of tajine in oven when preheating oven. For optimal flavor, it is recommended to use a tajine but a Dutch oven or ceramic pot with lid will work as well.
