Our Cheddar Onion Dip also makes a delicious Cheddar Onion Risotto with Mushrooms.

ALL YOU NEED
 Cheddar Onion Dip mix
 250 ml (1 cup) Arborio rice
 550 ml (2 ¼ cups) chicken or vegetable broth
 30 ml (2 tbsp) butter
 112 g (4 oz) fresh Shitake mushrooms sliced
 125 ml (1/2 cup) grated cheddar cheese

Combine rice, broth & 15 ml butter in a heavy bottomed saucepan with lid. Bring to a boil, reduce heat & cover. Simmer for 15-20 minutes.

Sauté mushrooms in remaining 15 ml butter, until lightly cooked. Set aside.

Remove saucepan with rice from heat, stir in contents of Dip Mix pouch, and mushrooms (add milk or cream for creamier option). Cover, let stand for 10 minutes, top with cheddar.
